Veal Spare Ribs with Chili Corn on the Cob

Ingredients:

  • 1.2 kg veal spare ribs
  • 4 corn on the cob

  • Salt

  • 8 small wooden skewers
  • 2 tbsp mayonnaise
  • Chili powder for dusting

Preparation

Bring some salted water to the boil in a large pan. Remove any excess leaves and string from the corn on the cob, wash them and cook in the covered pan over a medium heat for approx. 20 minutes. 
Pre-heat the oven to 160°C. Bake the veal spare ribs on a grill on the middle shelf for approx. 20 minutes.

Remove the cooked corn on the cob from the water and leave to dry on a paper towel. For ease of eating, insert wooden skewers in the sides of the corn cobs. Lightly coat the corn on the cob all over with mayonnaise and dust with chili powder.
 Arrange the cooked veal spare ribs together with the chili corn on the cob on pre-warmed plates and serve immediately.

Delicious with sweet potato chips and BBQ sauce.
