  • 15 g himalayan salt
  • 3 g white pepper
  • 1/2 g nutmeg
  • bay leaf
  • Juniper berries
  • clove

Preparation

Cut 2 by 2 cm cubes from the meat and season to taste.

Roast in the Dutch Oven and add the spices. Cook for 3 hours at 50°C (122°F).
