Okonomiyaki of rib fingers with Japanese pancake, spicy mayonnaise and sweet and sour vegetables
For the veal rib fingers:
- 3 l soy sauce
- 3 l water
- 3 onions
- 10 cloves of garlic
- 4 sticks of cinnamon
- 4 bay leaves
- 4 tbsp siracha
- 1500 g brown castor sugar

- 1 l basic pancake batter recipe
- 50 ml soy sauce
- 50 ml ginger syrup
- 50 ml sesame oil
- 2 tbsp siracha
For the spicy mayonnaise:
- 100 g siracha
- 400 g mayonnaise
For the sweet and sour vegetables:
- sweet and sour sauce
- cucumber
- radish

Preparation
For the rib fingers, bring the soy sauce to the boil with the water. Add 3 halved onions to the remaining ingredients and cook the rib fingers in this. Remove the meat from the pan and allow to cool. Cut into nice cubes, fry briefly over high heat and deglaze with a little soy sauce. Mix the pancake batter with the remaining ingredients and bake into nice small pancakes.
Mix the mayonnaise and siracha. Vacuum seal the julienne cucumber and radish with the sweet and sour sauce.
