Veal tartare

Ingredients:

  • Veal topside steak
  • 2 cornichons
  • 1 shallot
  • 1 tablespoon of capers
  • Pepper
  • Salt
  • Cress
  • Edible flower
  • Drizzle of crema di balsamico

Preparation

Slice the steak from the muscle of the topside very finely. Add half the chopped cornichons, onion and capers to that. Add salt and pepper to taste and stir. 

Fill 4 rings and top with a cress and an edible flower.
