Veal tongue and tuna tetaki dish

Ingredients:

  • veal tongue
  • court bouillon
  • fresh tuna
  • canned tuna in oil
  • mayonnaise
  • puffed quinoa
  • cresses
  • kafir lime
  • sweet and sour radish

Preparation

Cook the veal tongue in the court bouillon and peel it. Leave to cool in the bouillon.

Sear the tuna all around. Make a tuna mayonnaise with mayonnaise and canned tuna. Cut thin slices of the veal tongue and serve all components in a small glass bowl.
