Veal steak with rocket


  • 4 pieces of veal steak
  • 2 tbsp olive oil
  • 2 onions
  • 200g thick carrot sticks
  • 100g leek slices
  • 150g rocket
  • 4 tbsp Parmesan cheese
  • 1 tbsp balsamic vinegar
  • pepper and salt

Heat a grill pan until it is very hot. Use a brush to cover the veal escallopes on all sides with olive oil and grill them shortly, turning them as they go, to leave a grill mark. Remove the veal escallops from of the pan, sprinkle them with salt and pepper and cook them for around 12 minutes in an oven preheated to 200°C (392°F). Keep the meat warm on plates warmed to around 60°C (140°F).

Peel the onion and cut it into half rings. Heat the rest of the oil, sauté the onion, carrot and leek and season with salt and pepper. Arrange the vegetables on warm plates. Spoon the balsamic vinegar over them, then place the escallops on top. Sprinkle the cheese and rocket over each plate.

Delicious with a dressing of fresh herbs and finely chopped rocket.
